Sweet Cherry Lemon & Ricotta Crostinis

When ingredients come into season, I like to just buy them without a real plan of what I am going to make. This cherry recipe is super duper simple. Its one of those recipes where if you cook a lot, you probably have most of this stuff already on hand. Not only are these crostinis really gorgeous, they are easy to make. Perfect for a snack, or a summer appetizer. You don’t need to use a baguette either, wheat toast, or English muffins work great too!

Sweet Cherry, Lemon and Ricotta Crostinis
Makes 18

Ingredients:
¾ cup part-skim ricotta
2 lemons, zested and divided
1 tablespoon honey
2 cups sweet cherries, pitted and quartered
1 sourdough baguette, sliced into 18 pieces and toasted
salt and pepper to taste

Directions:
1. Place the ricotta, zest of one lemon, honey in a bowl and season with salt and pepper.
2. Stir the mixture until well combined.
3. Spread a small amount of the mixture onto each crostini and top with a small amount of cherries.
4. Finish each with the remaining lemon zest and serve.

sounds and looks lovely. i’ll be making this for a summer afternoon potluck and i’m sure it will be a hit, except i’ll be using strawberries instead of cherries. it’s about the end of season here, and the stores are all out!
