Heavenly Mashed Potatoes

This amazing potato recipe is inspired by something we always had at my house growing up. We could call them heavenly potatoes because they were just that good. My favorite meal were these potatoes and honey ham.  I would know, being from Idaho and all. Here is a weird side note. Did you know that Idaho is the Gem State, and there we call tater tots “tater gems?” True story. Oh, its also pronounced poh-tay-toh. Don’t even try and get all fancy and pronounce it poh-ta-toh. Everyone will hate you if you do that, its also really annoying. But for real, these mashed potatoes are really really good, and you should totally make them for Thanksgiving, and then be thankful you now know how to pronounce potato right. YAY!

Heavenly Potatoes
Serves 5 to 7

Ingredients:
4 russet potatoes, peeled and cut into chunks
1/3 cup heavy cream
1/4 cup (1/2 stick) unsalted butter
2 garlic cloves, minced
1/4 cup cottage cheese, pureed
2 tablespoons chives, thinly sliced
salt and pepper to taste
optional garnish:
chives
melted butter

Directions:
1. Place potatoes in a large pot and fill with water. Place over medium-high heat and bring to a boil.
2. Boil potatoes until fork tender, about 25 minutes.
3. While potatoes boil, place cream, butter and garlic in a small saucepan and simmer. Once mixture comes to a simmer, remove from heat.
4. Drain potatoes in a colander and return back to the pot. Lightly mash the potatoes and season with salt and pepper.
5. Pour cream mixture over the potatoes, a little at a time and mash the potatoes until all the cream mixture has been used and potatoes are smooth.
6. Stir in pureed cottage cheese and sliced chives and season with salt and pepper.
7. Top with remaining chives and melted butter, if desired. Serve warm.

I assume that the teeny-tiny twist is the pureed cottage cheese. I can not WAIT to make this recipe! Looks and sounds delish!!!

Mashers dripping in butter, your chives are going for a swim. I’ve never tried mashed with cottage cheese, such a brilliant idea! On a side note, our friends here in SLC actually live in the home built by the man who started Ore-ida and developed the Tater Tot! True dat. Sadly there were no tots in the home when they moved in, just bad red shag carpet.

mashed potatoes are never a terrible idea. I have to be honest though – i do prefer baby potatoes to russets flavor wise. these do look tasty though!

mashed potatoes is one of my most favourite things to eat. i always say i could live off of mashed potatoes, chicken, and noodles. and now add spinach. the holy four. definitely going to try this recipe when i’m back home in toronto. i find i don’t much like the taste of the potatoes here in india. weird.

I’m new to your site but the photographs are amazing. I’m looking at the mashed potatoes right now at 12:06am and I wish I could have a bowl of this before I go to sleep. Why do you tempt me this late? I might have to go get potatoes tomorrow. It looks gorgeous with the chives.

I’m planning on making these for a company banquet – Teri, since you’re from Idaho, you’ll understand my question a bit better than most probably. Are we talking the big honkin’ russet potatoes that are big enough for a meal in themselves or are we talking the smaller ones that come in the 5 and 10 pound bags? I ask cause they’re so different in size and I want to get my portions right!

Heavenly, for sure!!

I’m not a fan of /mashed/ potatoes but I loved this and so did everyone else! Lots of compliments…

we didn’t puree the cottage cheese and added a lot more than needed and it was delicious. leftovers were great too. thank you <3
