Chocolate Covered Peanut Butter Ritz Sandwiches

Holiday time is officially here! Okay, so in theory the holidays are great, but really they’re stressful and expensive. Don’t get me wrong, I still love holiday time, but it is what it is. Something I like doing to alleviate some holiday stress is give homemade food items as gifts..particularly sweets and baked goods. This is one of those things I’m definitely going to make. I’m going to package them up in really cute Martha Stewart holiday craft gift boxes and give them away as small tasty gifts. I had chocolate covered Ritz crackers for the first time last year. Oh man, after I ate my first one I was on a mission to hoard boxes of this “limited edition” stuff for the next month…. I thought they were that good. This year I thought I’d make my own. I thought the only way they could get better was adding peanut butter. Turns out, I was right. They’re so good…really I promise. Please make these for loved ones this year, they’ll love you even more for it! Plus, they’re super simple to make. Enjoy!

Chocolate Covered Peanut Butter Ritz Sandwiches
Makes 16

Ingredients:
2 cups milk chocolate chips
½ cup creamy peanut butter
¼ cup powdered sugar, sifted
32 Ritz crackers

1. Place chocolate chips over a double boiler and melt.
2. Place peanut butter and sugar into a mixing bowl and whisk until smooth.
3. Spread a small amount of the peanut butter mixture onto a cracker and sandwich together with another cracker.
4. Repeat until all the crackers and peanut butter filling have been used.
5. Place crackers onto a parchment line baking sheet and place in freezer for about 30 minutes.
6. Once the chocolate has melted, using a small pair of tongs, or tweezers, dip the chilled peanut butter sandwiches into the chocolate until completely covered.
7. Shake off any access chocolate and place back onto the parchment lined baking sheet.
8. Repeat with the remaining sandwiches and set aside to dry, about an hour.
9. Carefully peel from the parchment and serve.

These bring back great memories! I had a friend that use to make these and I never did get the recipe. They are DELICIOUS and I can’t wait to make them.

I make these every year! The best are if you add a few drops of peppermint oil to the chocolate – they taste like thin mints! And my grandma would always make the peanut butter ones with white chocolate…yum.

Delicious! When I was little I used to put peanut putter and jelly between ritz but peanut butter inside and chocolate outside is much less messy. When you bite into my version filling squeezes out from all sides, when your 8 it works when your 22, not so much. Thanks for the big kid version… perfect party eats!

i make these cookies every single year except with white chocolate. they are embarrassingly easy but soooo freakin delicious! they never last more than a few minutes. i’ll have to give them a try with regular chocolate. love that motion picture- adorable!

I remember making these as a child with my mom, except we used almond bark instead of milk chocolate. It was my job to spread the pb while my mom dipped them into white chocolate. It was also my job to eat the chocolate drizzles that fell on the wax paper. :)

Did you just use the chips you buy at the grocery store, or melting chips. My milk chocolate when melting always comes out thick, not beautiful like yours. Thanks I am dying to make these.

Hi Mary! I used regular chocolate chips from the store, but added about a teaspoon or two of shortening to the melted chocolate to help with the thickness/smoothness issue. It takes a bit longer for the coating to dry, but it works! Good luck!

Thanks for the idea—these were a super perfect simple thing to put together for a holiday party I’m heading to tonight. Sorta wish I would have thought to put a pretzel right in the middle of these little sandwiches (for an extra kick of crunch) and maybe done a few with semi-sweet or dark chocolate…

I used the crackers/pb then covered with melted almond bark. I made them to send overseas to my husband and his fellow soldiers in afghanistan!!! They were perfect, easy, and kept well in Tupperware. :) thanks for idea!

My mother-in-law used to make a variation of these at Christmas, using the Ritz-Bitz peanut butter mini crackers (saves labor) and melted white chocolate bark. YUMMY!
