Herb and Panko Crusted Baked Tomatoes

Have you guys ever seen the movie Fried Green Tomatoes? I used to watch that movie over and over again when I discovered it as a teen. In fact, I’m pretty sure it kind of helped shaped my personality. Idgie Threadgood, one of the main characters doesn’t take crap from anybody. She is one of those characters you love because she is so stubborn, and does what she wants. Maybe she is kind of mean but its ok, because you love her anyway. I wanted to be that kind of person. Not a push over, tough, yet caring. I would hope that my friends today would describe me as such. Anyway, if you have not seen this movie you really should. Every time I think of a tomato I think of the movie. So here we give you Baked Tomatoes. No, they are not green, and not fried, but they are really pretty and make an awesome side dish.

Herb and Panko Crusted Baked Tomatoes
Makes 8

Ingredients:
8 vine ripe tomatoes, sliced in half crosswise
1 1/2 cups panko breadcrumbs
1/4 cup grated Parmesan
1 1/2 tablespoons flat leaf parsley, minced
2 teaspoons oregano, minced
1 teaspoon rosemary, minced
1 teaspoon thyme, minced
1/4 cup (1/2 stick) unsalted butter, melted
salt and pepper to taste

1. Preheat oven to 375°F.
2. Gently scoop seeds from tomato halves. Set aside.
3. Place breadcrumbs, Parmesan, parsley, oregano, rosemary, and thyme in a small mixing bowl and toss together. Add melted butter and stir together until mixture is completely coated in butter. Season with salt and pepper.
4. Fill and top each tomato with about 3 1/2 tablespoons breadcrumb mixture.
5. Place each stuffed tomato onto a parchment lined baking sheet and bake for 20 to 25 minutes or until tomatoes soften and top have turned golden brown.
6. Allow tomatoes to cool for 5 minutes and serve.

I love the movie Fried Green Tomatoes! Not too many people have heard of it so I appreciate the reference. The recipe looks great, I will be trying it this weekend!

I grew up in Malaysia and watched Fried Green Tomatoes maybe like a hundred times. Then I moved to Mumbai and it seems that every time I mention the film (this happens when people question me about my affection for green tomatoes) no one’s heard about it! It’s so nice to know that not only has someone else wathed it, but its stayed with them too.

I loved that movie growing up! I just love it more any time I watch it. Have you ever read the novel on which it was based? It’s great too. I’ve always wanted to eat fried green tomatoes but never got around to it. I guess I’ll just have to try making these in the meantime :D You know, I bet these would be really good with quinoa instead of bread crumbs? Maybe maybe. I think you’re prompted me to do some experimenting :D

I love it when you roast tomatoes and they get all shriveled and delicious! Maybe I’ll roast some for dinner tonight :)

Step 2 says to scoop out the seeds and set them aside. However, you don’t seem to make use of them afterwards. What are they set aside for?

I should’ve written discard!…bc that’s what I did with them…well, half of them at least!…I ate the other half of the seeds and goo as a cooking snack :)

Do you think it would be okay to use regular breadcrumbs if I don’t have Panko breadcrumbs?

Yes, reg. breadcrumbs will be fine…you’ll get a slightly different texture, but it should be just as tasty!

This might be dumb question… but could I freeze these and cook when ready to serve?

We have tomato plants–but I don’t eat them, and it seems like my husband is always away for work when we have a tomatoes ready to eat. He is so disappointed b/c he hasn’t gotten to enjoy the tomatoes he has grown.

Hi Candice! Unfortunately tomatoes really don’t freeze well…once they begin to defrost they’ll sort of turn to mush.
