Itty Bitty Lobster Rolls
Makes 18

Ingredients:
easy mini baguettes:
all purpose flour for dusting
6 frozen Parker House rolls, thawed and each divided into thirds

12 ounces poached lobster meat, diced
3 1/2 tablespoons diced hothouse cucumber
2 1/2 tablespoons mayonnaise
1/2 lemon zested and juiced
2 teaspoons thinly sliced chives, plus more for garnish
2 1/2 tablespoons salted butter, melted
salt and pepper to taste

1. For mini baguettes: Preheat oven to 350°F. Roll each piece of dough into a small, 2”x 1/2” loaf and place onto a parchment lined baking sheet. Bake mini loaves for 12 to 15 minutes or until golden brown and fluffy. Set aside and allow baguettes to cool before slicing in half and assembling. (Tip: The baguettes can be made up to three days ahead of time and kept in an airtight container. They can be warmed in the oven at 200°F for about 10 minutes before using.)
2. For the filling: In a mixing bowl toss together the lobster meat and cucumber. Add the mayonnaise, lemon zest and juice and chives to the lobster mixture and season with salt and pepper . Gently mix together until well combined.
3. To assemble: Split each baguette open and fill with about 2 teaspoons of the lobster mixture. Brush the tops of each roll with melted butter and sprinkle with sliced chives. Serve.

***UPDATE! This giveaway is closed. We picked two winner. One randomly, and one because of their answer. The winners are Kate for her answer of Mini Crabbies, and randomly Madelana. Thank you for everyone that entered!

mini-meatballs, hands-down. it doesn’t matter which flavor profile you choose – italian with marinara, lamb with tzatziki, or pork with an asian glaze – they disappear quickly and everyone always wants the recipe!

My favourite is bacon wrapped water chestnuts! There are different sauces you can make with them but they are a hit every time. I could eat an entire platter of them! Plus, everything tastes better with bacon :)

For our bookclub recently, I was in charge of dessert and made a trio of mini granitas. The first was tiramisu using granita, then pineapple granita with carmelized bananas, and lastly rhubarb granita topped with creme fraiche and a strawberry. It was a huge hit!

The book looks amazing even by just catching glimpses from your gif. I like making all manner of tiny desserts e.g. mini pies, hand pies, bitty baby tarts. I think the fact that it’s a dessert, on top of being tiny, has a special level of adorable, but I’m excited to try more main course miniatures!

I have lots of fancy “small bites” I make for parties and occasions, but the thing I serve most often- because folks DO drop in- is sharp cheddar chunks with a slice of crystalized ginger on top. Ridiculously good. (and I did not receive this message until 2:41 AM on the 10th

What a great site. A friend hooked me up via Facebook and boy am I glad she did. Fav little bite to serve is a slice of summer sausage with a slice of English cucumber with several types of mustard for spreading/dipping. No crackers needed. Guys love it for the sausage that’s not a little hot dog and the gals love it because the cucumber gives it a crunch. Looks pretty if staged with the slices alternating so everyone gets the idea they go together. Use unusual serving dishes like those long boat types for olives or celery, etc.

Can’t wait to get a copy of your book!

Being myself vegeterian, it can be a little harder to prepare receptions for my friends. But still, i reeeeeeeeeeeally do like to serve tiny bites of tofu. These are tiny pieces of firm tofu, and they are full of flavors: they’re dressed with an harissa sauce with chili peppers that gives just a warm touch to the piece. I usually serve it with spinach leaves, only because it looks great <3

Lately, I tried your baked asparagus fries with three dipping sauces. I served it with the sun-dried tomato jam, but it was a litte too salty; I always have problems with the salt !

also good: making a sundried pesto spread. but they can just as easy be transformed into sweet bites for parties – cinnamon sugar for the win!

I grew up having curry puffs at all my birthday parties. Perfect flaky pastry folded over curried potatoes and meat. Delicious and the perfect size for little hands.

Scoop out a grape tomato, wrap a small ball of fresh mozzarella in fresh basil and place inside. Serve with balsamic dipping sauce, yum!
