Kale and Artichoke Dip + A Giveaway


Hey Guys! Teri and I took ourselves a bit of a “winter break” from the blog, but now we’re back with some neat recipes to share with you all! We’re trying our best to start this year off right by staying active and filling our bodies up with delicious, health(ier) foods. So that brings us to today’s recipe. I must say I have a bit of a weakness for oober creamy spinach and artichoke dip and love snacking on the stuff, hot or cold. It’s such a great comfort food for me and when I’m nibbling away I usually feel like this. Unfortunately I can feel my thighs grow the second the dip hits my lips, so this kale and artichoke dip is my healthier version of spinach and artichoke dip. It’s a cold version of the dip that I make with nonfat Greek yogurt instead of mayonnaise and cream cheese and bulked up with sauteed kale and shallots, instead of spinach, although you could always stick with spinach if that’s what you prefer. Not only are we starting the year with a delicious and healthier recipe, but we’re also hosting a giveaway! Check the details out below! *Recipe note: The cumin in this recipe is optional because I gave some to my sister who devoured half the batch, but then to my boyfriend who thought I was trying to poison him. We ended up finding out the issue was the smokiness of the cumin… it might not be for everyone, so adjust accordingly. :)

Kale and Artichoke Dip
Makes 2 cups

Ingredients:
2 1/2 tablespoons coconut oil
1 shallot, chopped
5 ounces chopped kale, ribs removed
1/4 cup dry white wine (chicken or vegetable broth is okay)
4 garlic cloves, minced
1 1/4 cup nonfat Greek yogurt
1/4 cup fat free sour cream (optional)
1/4 cup grated parmesan
1 cup chopped (canned) artichoke hearts
1/2 cup diced water chestnuts
1 green onion, thinly sliced
1 lemon, zested and juiced
2 teaspoons dry mustard
1 1/2 teaspoons ground ginger
1 1/2 teaspoons crushed red pepper flakes
1 teaspoon cumin, optional
salt and pepper to taste

1. Place oil in a large sauté pan, over medium-high heat. Add shallots and sauté for 1 minute. Add kale and continue to sauté for 3 minutes.
2. Add wine and cover for 1 minute or until kale has wilted and all the liquid has dissolved from the pan. Sprinkle garlic over mixture and sauté for 2 minutes. Season with salt and pepper.
3. Remove mixture from stove and transfer to a food processor. Pulse 3 to 4 times and set aside.
4. In a large mixing bowl combine the kale mixture with the remaining ingredients and stir together until the dip is well mixed. Season generously with salt and pepper. Refrigerate until ready to use.
5. Serve with baked, whole wheat pita chips.

Yummy! Love the sound of that dip, it has some of the flavours I always have in the cupboard/fridge along with some really nice seasonal ones. I must try this. I have the bottom of a sour cream pot and half a pot of Greek yoghurt to use up. I think I’ll just do an improv on what you’ve suggested and see what happens because I’m too lazy to go grocery shopping… c’mon, it’s only 3 days into 2013! Thanks for inspiring! ;)

Basically, I have to listen to whatever my toddler can tolerate while I try to cook. The good thing, is that she has good taste, and I can usually sway her towards something we’ll both enjoy in the moment. I like a little Coltrane or Miles Davis when I cook. If I’m making something regional, I really like to listen to music from that country or area- dorky, I know- but a lot of fun!

Depends on the mood, but upbeat music gets me jazzed for cooking and baking, especially with dishes that may take more effort. If I want to use cooking as a stress reliever, I’ll go for something more mellow.

Happy New Year — Love your Posts – keep ‘em coming! When we’re both in the kitchen (almost always) my wife’s favorite artist, Eric Clapton, usually gets the nod… and who can argue, he’s the best! That said, it’s always whatever we have on vinyl (record player in the kitchen, brilliant!). Recently we stumbled onto Clapton’s ’78 Backless LP, so that’s what’s going to be spinning this weekend for sure!

The type of music I cook to really depends on the type of day that I’ve had. If it’s been a rough day, I cook dinner to light, soft music like Jason Mraz or Ray LaMontagne. But if I’m in a playful mood, I like to cook to pop music like Lady Gaga or the Black Eyed Peas.

Love Kale and Artichokes and I love dip! Nice to have some choices that don’t blow your healthy eating goals. I love to cook with wine, too. A bottle for me and a splash in whatever dish I’m making ;-) Music? Usually an eclectic mix of retro and modern… anything from one hit wonders of the 80′s to today’s alternative sounds. This artichoke dip looks to die for! YUM!

I love listening to classic hymns while I cook. There is a band called King’s Kaleidoscope and Page CXVI that sing stuff like: Come Thou Fount, Amazing Grace, In Christ Alone, Rock of Ages, Etc. in a very modern and new style. Definitely worth checking out!

YUMMY looking recipe! I love the addition of kale and cumin – its smoky flavor is good in my world! As for my favorite kind of music I enjoy cooking too….evening – for sure orchestral – a Tchaikovsky symphony always is lovely – but Sat/Sun morning brunch and coffee type of cooking almost always opt for Paul Simon or Sting “radio” on Pandora. Your dip is a wonderful change up from the usual spinach. I love to listen to the “Blues” while I am cooking and/or dancing, my husband likes to work with me in the kitchen and we find ourselves dancing to the music while we are slicing, dicing and chopping. Now if I could only get him to help and dance with me while I clean the house!

I listen to Rat Pack music while cooking. I love Dean Martin, Frank Sintra, Nat King Cole, Ella Fitzgerald and new artists that perform Rat Pack like Michael Buble’ and Harry Connick, Jr.

I cook to soft jazz, preferably with no sung words — I find if I’m singing along, I might miss adding a vital ingredient (or add the wrong ingredient – makes a BIG difference!) So just give me the music and I’ll synchronize my chopping and stirring!

First, that dip looks awesome! Now, as for music that I like to listen to while cooking, lately I’ve been switching between the Dirty Dancing soundtrack and Handwritten by the Gaslight Anthem. I guess I like to dance while I cook/bake :)

Definitely holiday music through all of my overtime cooking starting in November and through most of January, but otherwise I like to listen to anything that gets me amped up and makes me feel powerful –The Rolling , Prince, Wu Tang Clan, and Dolly Parton are favorites!

Reggae all the way! Like Sister Carol or streaming KEXP’s Positive Vibrations show. Oh man, so good, no Bob Marley and it just makes you feel happy. It’s a good break from all the folky emo that plays all the rest of the time in the house :)

When cooking after work I usually listen to evening news on NPR but depending on the time I’ll lister to the jazz program. All kinds of jazz but bird land gets me moving and grooving!
