I don’t know about you guys, but after the holidays I always feel like a fat blob. Along with everyone else, I am trying to keep things light. Lots of veggies, lots of salad, and lots of yummy juice. So today we wanted to share a different kind of salad with you. We have teamed up with Lilly Pulitzer and put a twist on her Pomegranate Pineapple Salad. This one is a breeze to prepare, and would make a really good lunch to take to work. The pomegranates give it a nice crunch, while the pineapple makes this salad feel refreshing.

This looks so GOOD and healthy and I wish more than ANYTHING that I liked pineapples! Any suggestions on substitutions? “Marrying flavors” isn’t really something I’ve developed a knack for.
You can swap the pineapple out with your favorite citrus (like grapefruits) or even some fresh mangoes and papayas.
Mango! Who doesn’t love a good mango! Thanks for the reply–I am addicted to your recipes.
Personally i would take off the pinapple and it would looks delicious for me!
Awesome shot btw!
This photo looks like rainbow on a kitchen counter! So nice!
I know exactly what you mean: I am going through a real salad vinaigrette phase, trying out a million new, fresh homemade dressings. I take bad pictures at night and keep posting about them, I can’t help myself. And it all started because I also feel like a fat blob. Good to also get new recipe ideas. Thanks!
Oh my word! the final recipe looks so amazing! I definitely need to try that soon, especially seeing as its the middle of summer here in South Africa! yummy!
Oh this looks so pretty! Definitely a good addition to the weekday menu after the glutony of the holidays.
This looks so light and delicious. I love shrimp in a salad! Thanks for sharing!
