Twice Baked Sweet Potatoes Recipe

A delicious vegetarian friendly recipe for Twice Baked Sweet Potatoes! We love the soft, pillowy flesh of the roasted sweet potatoes with savory elements from the feta, garlic and thyme. 

Sweet Potatoes Butter Heavy Cream Garlic Egg Feta Thyme Salt & pepper Pecans

Ingredients:

Roast sweet potatoes.

Scoop out flesh and place in a bowl.

Mash warm sweet potatoes with butter, cream and garlic until smooth.

Mix in egg and crumbled feta.

Pipe filling into sweet potatoes and bake.

Top with crumbled feta and pecans and serve.
